    Bon A Petite!

    Arroz con Leche (Rice Pudding)

    1 cup long grain rice
    3 cups whole milk
    1 cup evaporated milk
    1/2 cup granulated sugar
    1 stick cinnamon
    1/2 cup raisins
    1/2 tablespoon brandy
    1 teaspoon vanilla extract
    Ground cinnamon

    Preheat oven to 350 degrees F.

    Soak the rice in hot water for 10 minutes.

    Drain and place in a 2-quart pan with a lid. Add 2 cups of milk to the rice and stir. Bring to a boil, covered, over medium-high heat. As soon as the milk begins to boil, place the covered pan in the oven for 15 minutes, then remove. The milk should be completely absorbed and the rice cooked.

    Meanwhile, in another pan heat the remaining cup of milk, evaporated milk, sugar and the cinnamon stick. Allow to barely simmer for 5 minutes. Add the raisins, brandy and vanilla extract and simmer for an additional 10 minutes. Add the rice and continue cooking, stirring often, for 5 minutes.

    Serve in individual dishes and sprinkle with ground cinnamon.
